WHere is an easy version of a drink featured on a new menu. This is a batch premix which is bursting with essence of a Christmas time, rendering it excellent for hosting a festive gathering. Any leftover syrup to use in breakfast cocktails, puddings, or to mix more rounds of this cocktail.
The Bikini Cocktail
Serves 10 guests
To make the Clementine Syrup (makes 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g fine sugar
For the Drink (produces 850ml, to serve 10)
400ml decent vodka
100ml London dry gin
150ml peach schnapps
200ml clementine syrup (from the recipe above)
Fresh cranberries, to garnish
Mandarin essential oil, as a final touch
Directions
For the Cordial: Combine every items into a pot, bring to a gentle boil, stirring to dissolve. Then, remove from the stove allowing it to cool down fully. Transfer to a clean bottle, close it and store in the refrigerator, it can be stored for about a month.
To make Batch Mix: Pour all the liquids in a big jug, allow it to infuse for 60 minutes, then strain best through cheesecloth, so it's perfectly clear.
When ready to serve: Pour 85ml from the premix to a mixing glass containing ice, and agitate carefully for about 60 seconds until cold. Pour into a frosted cocktail glass or equivalent, decorate with a few cranberries and finish with a light spray with the mandarin essence over the drink.
